A healthy way to smoke

Oh yeah, you read that right. There is a way to smoke and to do it in a healthy manner. It has nothing to do with cigarettes though. Sorry.

Hubby purchased a smoker a few months ago to use throughout grilling season. Since I am a proud No Meat Athlete, I don't partake in the ribs, pork and other animal parts he normally throws on the grill or in the smoker.

In the early days of our new cooking device, we tried to smoke the standard portabello mushroom cap - my normal grill fare. While it was "fine", it didn't get any better with the smoker. Hubby suggested we try tofu.

Oh. My. Goodness.

He puts the same super secret dry rub on the tofu as he does for pork or any other meat he smokes. Then he waves some sort of magic wand and puts in the smoker. He has done this for me three or four times now, and it just gets better and better and better. Throw a dash of BBQ sauce on a piece of the tofu and put it on a bun - you have one amazingly yummy and healthy "BBQ" sandwich. If anyone is interested in the actual how-to for this tofu smoking process, post a comment. I'll get hubby to document what actually needs to be done.

But wow. This is so freaking amazing.
